This recipe works well with 75-150g of an active sourdough starter with 100% hydration. For a stronger sourdough flavor, use more starter. Or make my sourdough cinnamon rolls! Place the all-purpose and bread flours in a large mixing bowl and whisk to combine. Add the water, yeast, sugar, salt, and eggs, and mix together on medium-low speed until combined (approx. 7 minutes), stopping to scrape the bottom and sides of the bowl with a silicone spatula. With a fork or spoon, combine brown sugar and cinnamon in a medium bowl. Turn risen dough onto a well floured work surface and, with lightly floured hands, pat into a loose rectangle. Roll dough into a 12x16-inch rectangle with a floured rolling pin. Place all ingredients, except butter, in pan of bread machine according to manufacturer's directions. Select dough setting. When cycle is complete, turn out onto floured surface. Cut dough in half and roll each half out to a 1" thick circle. Cut each half into six 3 1/2" rounds with inverted glass as a cutter. Bake for 35 to 40 minutes, or until a thermometer reads 180-190°F when placed in the middle of the brioche loaf.
